Cold Salads

Cajun Coleslaw

Preparation Time 1 hour

Difficulty level: 4

Ingredients:

4 cups of cabbage, shredded

1 cup carrots, shredded

3/4 cup of your favorite Jackalope River "Wing Sauce"

1 teaspoon paprika

Directions:

Combine cabbage, carrots, "Wing Sauce"  in a large mixing bowl. Mix well. Coverand refrigerate for atleast 30 minutes. Sprinkle with paprika.

Yield: 6 servings 


Cajun Potato Salad

Preparation Time 1 1/2 hour

Difficulty level: 4

Ingredients:

4 medium potatoes, peeled and chopped

1/2 cup celery, chopped

1/2 cup carrots, chopped

1 cup of your favorite Jackalope River "Wing Sauce"

2 hard boiled eggs, chpped

Directions:

Cook potatoes in boiling water for 20 minutes or until tender. Do not overcook. Drain and let cool. Place in a large bowl. Add celery, carrots, and "Wing Sauce". Mix well. Gently fold in the eggs. Cover and refrigerate for 1 hour.

Yield: 4 servings 

Cajun Bean Salad 

Preparation Time 2 1/2 hour

Difficulty level: 5

Ingredients:

1 (16 ounce can) of kidney beans, drained

1 (16 ounce can) black beans, drained

1/4 cup green onion, chopped

1/4 cup red wine vinegar

2 teaspoons of your favorite Jackalope River "Hot Sauce Sauce" 

1 teaspoon white pepper (optional)

1 teaspoon ground cumin (optional)

1/2 teaspoon salt

1 teaspoon dried parsley

Directions:

Combine kidney beans, black beans, onion, salt, (optional items), and "Hot Sauce" into a large mixing bowl. Toss lightly to mix well. Cover and refrigerate for 2 hours. Sprinkle with parsley before serving. 

Yield: 4 servings 

Marinated Cucumber Salad 

Preparation Time 1 hour

Difficulty level: 5

Ingredients:

2 large cucumbers. sliced

1/4 cup onion, chopped

1/4 cup vinegar

3 teaspoons of your favorite Jackalope River "Hot Sauce Sauce"

1/2 teaspoon dried basil leaves

6 lettuce leaves

Directions:

Place cucumbers in a large shallow dish. Combine onions, vinegar, "Hot sauce" and dried basil leaves in a small bowl. Mix well. Pour over cucumbers. Cover and refrigerate for 30 minutes. Serve of lettuce leaves.  

Yield: 6 servings 

Seafood Salad 

Preparation Time 1 hour

Difficulty level: 6

Ingredients:

1 (6 1/2 ounce can) shrimp, drained. or 1 cup shrimp, peeled & cooked

1 (6 1/2 ounce can) crab meat, drained

3/4 cup of your favorite Jackalope River "Wing Sauce"

1/4 cup green onion, chopped

1/4 cup sweet red pepper, chopped

1 teaspoon dried basil

1/2 teaspoon thyme

4 lettuce leaves

  

Directions:

Combine shrimp, crab meat, "Wing Sauce" green onion, sweet pepper, basil, and thyme in a medium-size bowl. Mix well. Cover and refrigerate for 30 minutes. Serve on top of lettuce leaves. 

Yield: 4 servings
